Apple Cider Donuts


1½ cups apple cider
¾ cup sugar
6 tablespoons unsalted butter, room temperature
1 egg
1½ cups Namaste Perfect Flour Blend or Organic Perfect Flour Blend
1½ teaspoons baking powder
½ teaspoon freshly grated nutmeg
1 teaspoon cinnamon
pinch of salt


  1. Preheat oven to 350°F. Spray two 6-cavity donut pans with oil.
  2. In a medium pot over medium-high heat, reduce 1 ½ cups of apple cider down to 3/4 cup. Set aside to cool.
  3. In a large bowl cream together sugar and room temperature butter with electric mixer until light and creamy. About 3-4 minutes.
  4. Add egg to sugar mixture and mix until thoroughly combined.
  5. In a separate bowl combine the flour, baking powder, nutmeg, cinnamon and salt. Whisk to combine. Alternately add and mix the flour and cooled apple cider into the sugar mixture until thoroughly combined.
  6. Portion batter into prepared donut pans, filling molds 3/4 full.
  7. Bake for 15 minutes or until donuts are golden brown.

Optional glaze

  1. Melt 3-4 tablespoons butter and brush on tops of donuts. In separate bowl combine 1/2 cup sugar with 1-2 tablespoons of cinnamon (to taste). Roll donuts in cinnamon sugar immediately after brushing with butter. Enjoy!
