Apple Cinnamon Bread


For the apples
1-1/2 cups peeled and chopped apples (about 1 large or 2 medium apples)
1/3 cup light or dark brown sugar, packed
1-1/2 teaspoons cinnamon

For the batter
1 package Namaste Organic Quick Bread & Muffin Mix
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup oil or butter, softened
2 eggs
1 teaspoon vanilla
3/4 cup milk, any kind


For the apples:

  1. Whisk together brown sugar and cinnamon in a medium bowl. Add apples and toss. Set aside.

For the batter:

  1. Preheat oven to 350° F. Spray a 9x5 loaf pan with non-stick spray.
  2. In a large bowl, whisk together mix, cinnamon and nutmeg.
  3. In medium bowl, combine milk, oil or butter, vanilla and eggs and mix well.
  4. Add wet ingredients to dry mixture and mix until just combined.
  5. Spread about half of batter into prepared pan. Spread apple mixture evenly over batter. Top with remaining batter.
  6. Bake for 60-75 minutes or until toothpick inserted in center comes out clean. If it appears to be getting too dark, top with loose tent of aluminum foil at 30 minute mark.
  7. Cool bread completely in the pan on a wire rack. Bread will crumble if you try to cut it when still too warm.
