Apple Cinnamon Bread

Ingredients:
For the apples
1-1/2 cups peeled and chopped apples (about 1 large or 2 medium apples)
1/3 cup light or dark brown sugar, packed
1-1/2 teaspoons cinnamon
For the batter
1 package Namaste Organic Quick Bread & Muffin Mix
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup oil or butter, softened
2 eggs
1 teaspoon vanilla
3/4 cup milk, any kind
Directions:
For the apples:
- Whisk together brown sugar and cinnamon in a medium bowl. Add apples and toss. Set aside.
For the batter:
- Preheat oven to 350° F. Spray a 9x5 loaf pan with non-stick spray.
- In a large bowl, whisk together mix, cinnamon and nutmeg.
- In medium bowl, combine milk, oil or butter, vanilla and eggs and mix well.
- Add wet ingredients to dry mixture and mix until just combined.
- Spread about half of batter into prepared pan. Spread apple mixture evenly over batter. Top with remaining batter.
- Bake for 60-75 minutes or until toothpick inserted in center comes out clean. If it appears to be getting too dark, top with loose tent of aluminum foil at 30 minute mark.
- Cool bread completely in the pan on a wire rack. Bread will crumble if you try to cut it when still too warm.
