Artichoke Tomato & Spinach Flatbread


1-14" crust or 2-7” flatbread crusts using Namaste Foods Pizza Crust Mix or 1 package Namaste Artisan Pizza Crust Mix
2 medium garlic cloves, minced
2 Tbsp. fresh parsley, minced
6 Tbsp. olive oil, divided
1/2 cup mozzarella cheese, shredded
4 Tbsp. shredded parmesan cheese, divided
1/2 cup cherry tomatoes, halved or sun-dried tomatoes, chopped
1 cup fresh baby spinach leaves, roughly chopped
1/2 tsp. dry basil leaves
1/4 cup Kalamata or black olives, sliced
14 oz. can quartered artichoke hearts, drained


  1. Make crispy pizza crust as directed on Pizza Crust package; bake additional 5-7 minutes after flipping. Can make 2 smaller crusts instead of 1 large. Be sure to spread dough to no more than 1/4” thick. Place on wire rack while adding toppings.
  2. In a small bowl, combine garlic, parsley and 4 Tbsp. olive oil. Spread evenly over pizza crust. Sprinkle with mozzarella and 2 tbsp. parmesan cheese.
  3. Toss artichokes, sun-dried tomatoes, spinach, olives and spinach with remaining 2 Tbsp. olive oil. Season with salt and pepper to taste. Arrange the mixture on top of the cheese. Sprinkle remaining parmesan on top.
  4. Bake additional 10-15 minutes. Slice and serve hot. Serves 4 as appetizer or 2 - 3 as light meal.
