Banana Bread Biscotti

1 package Namaste Organic Quick Bread & Muffin Mix
4 eggs
1/2 cup unsalted butter, melted
1 very ripe banana, mashed thoroughly
2 teaspoons vanilla extract
1/2 cup whole walnuts


  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper. I don't recommend using a stand or hand mixture for this because the dough is on the thick side.
  2. In a large bowl, beat together all ingredients except walnuts with electric mixer.
  3. Carefully fold in walnuts.
  4. Scrape the batter onto a parchment lined baking sheet, and form into a loaf shape. Smooth the edges and top.
  5. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean and the edges are a golden brown. Cool for 15 minutes.
  6. Slice into 1" thick slices and return to baking sheet, slice down. Bake for 12-15 minutes, flip over and bake 12-15 minutes more, until crispy and dry. Cool completely before serving.
