Banana Nut Pancakes

Makes about 10-12 four inch pancakes.


2-2/3 cups Namaste Foods Waffle & Pancake Mix
2 eggs
1 Tbsp. oil
1 medium banana, mashed
½ cup pecans or walnuts
¾ to 1 cup water, depending on desired consistency


  1. Combine all ingredients and mix well. For thinner pancakes add more water. Pour onto preheated, sprayed pan or griddle. As with all pancakes, may need to add more liquid to batter as it sits and absorbs moisture.
  2. Top with butter, maple syrup, honey or a dusting of powdered sugar.


  • Ingredient info Cook’s Notes: Look for bananas that are firm, bright in appearance, and free from bruises or other injury. Best eating quality has been reached when the solid yellow color is specked with brown.
