Blueberry Lemon Scones


1 package Namaste Foods Lemon Scone Mix
1 egg, beaten
2 tablespoons plus 2 teaspoons milk, any kind
4 tablespoons cold butter
Zest from 1 medium lemon
1 teaspoon poppyseeds
1 cup fresh or frozen blueberries
Lemon Glaze
1 cup powdered sugar
Juice from 1 medium lemon


  1. Cut cold butter into mix as directed on package. Add zest, milk and egg. Combine, fold in blueberries and shape as directed.
  2. Bake, for 13-15 minutes, cut and cool scones as directed.
  3. Glaze: In a separate bowl combine powdered sugar and juice. Blend well. Add water by teaspoon if too thick.
  4. Drizzle glaze over cooled scones. Optional: sprinkle with more lemon zest if desired.
