Broccoli Cheddar Kugel

Ingredient info - Broccoli, meaning “cabbage sprout” in Italian, has been growing wild in the Mediterranean regions for hundreds of years. It was first commercially grown in the United States in the 1920’s.


1 package Namaste Foods Say Cheez Macaroni and Cheez Dinner
1-(10 oz.) package frozen chopped broccoli, thawed
2 cups milk, any kind
1 tsp. salt
½ cup sour cream
4 eggs, lightly beaten
½ tsp. onion powder
1½ cups cheddar cheese, grated


  1. Set aside seasoning packet. Boil elbow macaroni in salted water for 7-10 minutes until cooked but still firm (al dente). Drain in colander and run under cold water briefly to stop cooking process. Coat with a little oil to prevent the pasta from sticking together, set aside.
  2. Preheat oven to 325° F. Spray 9x13 pan with non-stick spray.
  3. Combine milk, sour cream, eggs, salt, onion powder and Say Cheez seasoning packet and mix well. Put pasta in pan, then broccoli and about half of grated cheese. Pour the milk mixture over the noodles and bake for about 35-45 minutes until a knife inserted in the middle comes out clean. Sprinkle the rest of the cheese on top and return to oven for 3-4 minutes to melt cheese. Remove from oven and let rest for 10 minutes before serving.


  • This noodle casserole is great for brunch or dinner. Serve with a nice green salad.
