Caramelized Apple Gingerbread

Serves 9.


½ pkg. (2 cups + 2 Tblsp.) Namaste Foods Spice Cake Mix
¼ cup butter or margarine, melted
1 - 21 oz can GF apple pie filling
1/3 cup brown sugar
1 egg
1/3 cup dark molasses
1/3 cup oil, butter or margarine (for batter)
½ cup water
1 tsp. ground ginger


  1. Preheat oven to 350° F. Spray 9 x 9 pan with non-stick spray.
  2. Mix ¼ cup melted butter, brown sugar and pie filling. Spoon into pan. Place in oven while making cake batter (about 10 minutes.)
  3. Combine remaining ingredients in a large bowl; blend well. Pour over warm filling mixture. Bake 30-35 minutes or until toothpick inserted comes out clean and top is cracked. Best served warm with a scoop of vanilla ice cream or frozen yogurt.


  • If you have difficulty finding a gluten free pie filling, you can always make your own from scratch.
  • Apple Pie Filling: • ¼ cup sugar • 1 tbsp arrowroot, tapioca flour or cornstarch • ½ tsp cinnamon • 1/8 tsp salt • 3 cups thinly sliced, pared tart apples • 1/8 tsp nutmeg
  • Mix all ingredients together in large bowl. Set aside and let juices mix for 15 minutes.
  • Continue as directed.
