Chocolate Banana Cupcakes

For muffins
1 cup coconut sugar
1/2 cup olive oil
2 tsp vanilla
1/4 cup cocoa powder
1/2 cup applesauce
3 eggs
3 ripe bananas, mashed
3 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
3/4 cup almond milk

For Ganache
1/3 cup dark chocolate (cut into small pieces)
1/3 cup coconut cream* (fat only)

1 tsp vanilla


Preheat oven to 350°F. Spray muffin tin with non-stick spray or insert paper liners. In large bowl, mix together coconut sugar, olive oil, vanilla, cocoa powder, applesauce, eggs and bananas. Add flour, baking soda, salt, cinnamon and milk and mix until incorporated.

Fill muffin cups with batter ¾ full. Bake for about 30 minutes or until toothpick inserted in center comes out clean. Cool completely.

Chocolate ganache (super easy)
Place dark chocolate (cut into small pieces) in a medium bowl.
Heat coconut cream* (fat only) and vanilla in a sauce pan until it’s boiling.
Pour coconut milk over the chocolate and stir until the chocolate is melted. Pour ganache over cooled cupcakes.


  • You can either buy coconut cream, which is only the heavy fat portion of coconut milk, or refrigerate a can of coconut milk and scoop the fat off the top.
