Cinnamon Roll Cookies

Ingredients:
For the cookies
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
2 eggs
1 tablespoon vanilla extract
3 cups Namaste Perfect Flour Blend or Organic Perfect Flour Blend
3 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
For the frosting
4 ounces cream cheese, softened
8 tablespoons unsalted butter, softened
2-1/2 cups powdered sugar
1 teaspoon vanilla extract
1-2 teaspoons milk, any kind
cinnamon for garnish
Directions:
For the cookies
- Cream together sugar and butter in large bowl with electric mixer until light and fluffy. Add eggs and mix in one at a time, then add vanilla.
- Add flour, baking powder, cinnamon and salt and mix well. Chill for 30 minutes.
- Preheat oven to 350°F. Grease baking sheet or line with parchment paper.
- Roll dough into 1" balls and flatten slightly to about 1/2" thick.
- Bake for 7-9 minutes or until bottom edges are slightly brown. Allow to cool completely on wire rack.
For the frosting
- Beat cream cheese and butter together in a large bowl with electric mixer until light and fluffy.
- Mix in powdered sugar until smooth. Add vanilla and milk. If too thick, add more milk by a teaspoon at a time. If too thin, add more powdered sugar.
- Frost cooled cookies with spatula or pipe on with frosting bag and 1M tip or snip off a corner of a zip-loc bag.
- Sprinkle tops with cinnamon to garnish if desired.
