Cinnamon Spice Bars with Sweet Ginger Icing

Ingredients

2 cups Namaste Perfect Flour Blend
1/2 tsp baking soda
1-1/2 tsp cinnamon
1 teaspoon allspice
1 egg and 1 egg yolk, room temperature
1 cup brown sugar
1/2 cup sugar
1 tsp vanilla
1-1/2 sticks butter or Earth Balance Butter, melted
1 tablespoon grapeseed oil


Sweet Ginger Icing

6 tablespoons butter or Earth Balance butter, softened
4 tablespoons unsweetened coconut milk
1 teaspoon ground ginger
1 teaspoon vanilla
4 cups powdered sugar

Directions

  1. Preheat oven to 350° Line a 9 x 13“ pan with parchment paper.
  2. In a medium bowl whisk together baking soda, cinnamon, and allspice and set aside. In a large bowl cream your egg, yolk, vanilla, and sugars. Add in your melted butter, grapeseed oil, and cream again. Fold your dry ingredients into the wet ingredients with a spatula until just combined. (DO NOT BLEND, Namaste’s flour thickens fast, if you blend it will change the consistency of the batter and the recipe may not turn out.)
  3. Pour your batter into your lined baking pan. Place in your preheated oven and bake for 18-20 minutes. Insert with a toothpick to check when done. Once done baking. Remove from oven and let cool. While your bars are cooling start your icing.
  4. Frosting: In a large bowl cream together your butter, vanilla, coconut milk, and ginger spice. Slowly add in your powdered sugar. Blend until smooth and creamy. Once bars are cooled spread your icing over the top. Top with crushed pecans (optional).
