Coffeehouse Pumpkin Bread

Makes 2 loaves


1 can (15 oz) pumpkin (not pumpkin pie filling)
4 eggs
2/3 cup oil
2/3 cup milk, any kind
1/2 cup honey
1½ teaspoons vanilla
1 package Namaste Organic Quick Bread & Muffin Mix
1 teaspoon baking soda
1½ teaspoons cinnamon
½ teaspoon ground cloves
1 teaspoon ground nutmeg
½ teaspoon ground ginger
½ cup raw or roasted and salted pumpkin seed or pepitas


  1. Preheat oven to 350°F. Spray two 9x5 or 8x4 loaf pans with non-stick spray.
  2. In a large bowl, combine eggs pumpkin, oil, milk, honey and vanilla until smooth.
  3. In a separate bowl whisk mix, baking soda, and spices. Gradually add to wet mixture.
  4. Transfer batter evenly into the two loaf pans. Sprinkle tops with pumpkin seeds.
  5. Bake 60-70 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes before removing to wire rack to cool.
