Cranberry Orange Streusel Coffee Cake


2 cups Namaste Foods Organic All Purpose Baking Mix
3/4 cup orange juice
1/2 cup sugar
1 Tbsp. orange zest
2 eggs or egg substitute equivalent
1/3 cup oil
1/2 cup dried cranberries (or other dried fruit)
Streusel topping
3/4 cup gluten free oats
1/3 cup brown sugar, packed
1/2 tsp. cinnamon
1/4 tsp. salt
2 Tbsp. butter or coconut oil, melted
1/4 cup chopped walnuts, optional


  1. Preheat oven to 350° F. Spray an 8x8 pan with non-stick cooking spray.
  2. Combine all coffee cake ingredients except cranberries in a mixing bowl. Blend well by hand or with an electric mixer. Fold in cranberries. Pour batter in prepared pan.
  3. In a small mixing bowl, combine streusel ingredients until well combined. Sprinkle streusel topping evenly over the top of cake batter.
  4. Bake for 30-45 minutes, or until toothpick inserted in the center comes out clean.
