Easy Banana-Walnut Muffins

Ingredients
1/2 cup vegetable oil
1/2 cup packed light or dark brown sugar
3/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 tsp. vanilla extract
1-1/2 cups mashed ripe banana (about 3)
1/4 cup honey
2 large eggs
2 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1/2 cup chopped walnuts (optional)
Directions
- Preheat oven to 350° F. Lightly grease mini muffin pan.
- Beat together the oil, sugar, baking soda, salt, cinnamon, nutmeg and vanilla in a medium bowl until smooth. Add the bananas, honey and eggs, beating until smooth. Add the flour and continue beating until well blended. Stir in nuts.
- Spoon the batter into the prepared pan, and bake for approximately 20 minutes.
Variations
- Substitute the walnuts for blueberries or mini chocolate chips!
