Easy Chocolate Cupcakes with Buttercream Chocolate Frosting

Ingredients
1 cup Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1/2 cup cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons oil, any kind
1 cup granulated sugar
2 eggs
1 cup milk, any kind
1/2 teaspoon vanilla extract
Optional Buttercream Chocolate Frosting
1/2 cup (1 cube) butter, softened
2 cups powdered sugar
1/2 cup cocoa powder
2 tablespoons warm water
1 teaspoon vanilla extract
Directions
- Preheat oven to 350° F and line two muffin tins with 15 cupcake liners.
- In a small mixing bowl, combine dry ingredients and whisk them together well.
- In a large mixing bowl, whisk together oil and sugar. Add your eggs, milk and vanilla and mix well.
- Pour your dry ingredients into your wet ingredients, and stir together till everything is well incorporated. Batter will be runny.
- Pour your cupcake batter into your cupcake liners, filling to 2/3 full. Bake in the oven for 14-16 minutes, or until toothpick inserted comes out clean.
- Let cool entirely before frosting.
Buttercream Chocolate Frosting
- In a large mixing bowl, beat butter with a hand mixer until creamed.
- Add your powdered sugar, cocoa powder, water and vanilla, and beat till smooth. If necessary, add a little more water to make the frosting smooth.
- Pipe on top of your cooled cupcakes, and add sprinkles, if desired.
- Store these cupcakes on the counter for 1-2 days, or in the fridge for one week.
