Eggnog Pancakes

1 cup Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1 teaspoon gluten free baking soda
3 teaspoons baking powder
2 cups egg nog
3 eggs, beaten
1/4 cup salted butter, melted
1 teaspoon vanilla extract


  1. Combine all dry ingredients, set aside. Whisk together all wet ingredients. Whisk wet and dry ingredients together.
  2. Allow batter to rest for 10 minutes.
  3. Heat griddle to 375°F, pour by 1/4 cup, and cook pancakes.
  4. This makes roughly 12 pancakes. They're so light and fluffy! Serve with butter and syrup! I have formulated this recipe specifically with Namaste's gluten free Perfect Flour Blend.
