Eggnog Pancakes

Ingredients
1 cup Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1 teaspoon gluten free baking soda
3 teaspoons baking powder
2 cups egg nog
3 eggs, beaten
1/4 cup salted butter, melted
1 teaspoon vanilla extract
Directions
- Combine all dry ingredients, set aside. Whisk together all wet ingredients. Whisk wet and dry ingredients together.
- Allow batter to rest for 10 minutes.
- Heat griddle to 375°F, pour by 1/4 cup, and cook pancakes.
- This makes roughly 12 pancakes. They're so light and fluffy! Serve with butter and syrup! I have formulated this recipe specifically with Namaste's gluten free Perfect Flour Blend.
