Eggnog Spice Bundt Cake

For Cake:

3-1/2 cups Namaste Foods Spice Cake Mix
1/2 cup eggnog
1/2 cup sour cream
4 eggs
1/4 cup oil
1/4 cup water

For Pan Coating:

1/3 cup sugar
1-1/2 teaspoons cinnamon

For Frosting:

1/4 cup butter, softened
1/2 tsp. vanilla
1/2 tsp. nutmeg
1/8 tsp. salt
2 to 2 1/2 cups powdered sugar
1/4 cup eggnog, room temperature

1. Preheat oven to 350° F.
2. Generously spray bundt cake pan with cooking spray.
3. Mix sugar and cinnamon for pan coating in a small bowl. Coat the bundt pan with mixture, reserving leftovers.
4. In a large mixing bowl, combine cake mix, eggnog, sour cream, eggs, canola oil and water until smooth.
5. Pour the batter into the prepared bundt pan.
6. Sprinkle leftover coating mix on top of the batter in pan.
7. Bake 35-40 minutes, until toothpick inserted comes out clean.
8. Place on a wire rack to cool for 10 minutes. After 10 minutes, flip cake over and remove from pan and return to wire rack. Allow to cool completely and then remove to serving platter.
9. Once cake is cool, cream butter in a mixing bowl. Add vanilla, nutmeg and salt. Then add powdered sugar 1 cup at a time, alternating with eggnog.
10. Mix to a smooth but pourable thickness; adjust as needed. Drizzle frosting over the top of cake.
