Fig Bars


1¾ cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1 cup sugar
¾ cup butter or butter substitute, softened
¾ cup finely chopped walnuts (optional)
¼ tsp. salt
2 tsp. finely grated lemon peel, divided
7 oz. bag dried figs chopped, stems removed
3 tbsp. apricot preserves


  1. Preheat oven to 350° F.
  2. In a large bowl combine flour, sugar, salt, butter, walnuts (if using) and 1 tsp. lemon peel with electric mixer. Blend until crumbly. Reserve 1½ cups of the mixture. Grease 8x8 pan and press remaining mixture into pan.
  3. Combine figs, remaining 1 tsp. lemon peel and apricot preserves. When well combined, spread on top of bottom crust. Sprinkle remaining crumble mixture on top. Bake for 30-35 minutes.
