Fig Cinnamon Bars

Ingredients:
9 tablespoons refined coconut oil or vegan butter
1/4 cup coconut sugar
1 heaping teaspoon ground cinnamon
2-1/4 cups Perfect Flour Blend or Organic Perfect Flour Blend
1 large pinch sea salt
2-1/3 cups dried figs, cut in half
1/4 cup coconut sugar
1 cinnamon stick
1- 1/2 cups boiling water
Directions:
- Preheat oven to 350° F (180°C). Grease a 8 x 8 square baking pan and line with parchment paper.
- Beat the coconut oil, sugar and cinnamon until light and fluffy. Sift the flour and sea salt and add to the oil and sugar mixture.
- Press the mixture firmly into your pan and bake in the center of the oven for 25 minutes. Allow to cool slightly.
- While the base is baking prepare the fig mixture by placing figs, sugar, cinnamon stick and boiling water in a medium saucepan. Allow mixture to come to a boil and immediately turn the heat down and allow the mixture to simmer for about 30 minutes or until the figs have softened and water is reduced by about 1/3.
- Remove the cinnamon stick and pour fig mixture into a blender or food processor and pulse until smooth. Pour over the cooled base and bake for another 10-15 minutes or until set. Allow to cool before slicing.
Makes 16 squares.
