French Silk Brownies

1 package Namaste Foods Brownie Mix
3 eggs
3/4 cup oil or melted butter
3/4 cup hot water
French Silk Layer

4 oz (1/2 cup) semi-sweet baking chocolate, plus more for garnish (semi-sweet chocolate chips ok)
8 oz (1 pkg) cream cheese, softened
16 oz (2 - 8 oz tubs) Cool Whip, divided
1 teaspoon vanilla extract

  1. Preheat oven to 350°F. Line 9x13 pan with foil or parchment paper with some overhang and set aside.
  2. Make brownies according to package directions. Allow to cool completely on wire rack.
  3. French Silk layer: Melt chocolate in a small microwave safe bowl on high for 30 seconds, then stir and heat for 30 seconds again. Continue until melted and smooth. Let cool 5 minutes.
  4. In a large bowl beat cream cheese with electric mixer until smooth. Add chocolate and mix until well combined, then add vanilla. Fold in one container of Cool Whip. Spread over cooled brownies.
  5. Spread second container of Cool Whip on top. Use a potato peeler to shave baking chocolate (or shave from chocolate bar) to garnish.
  6. Chill for at least an hour in refrigerator before serving. We thought it tasted better the longer it chilled.

Variation: If you'd like to use fresh whipped cream instead of Cool Whip, you'll need 2 cups heavy whipping cream beaten into stiff peaks. If you'd like to use our Organic Dark Chocolate Brownies in this recipe, cut recipe in half and make in an 8x8 or 9x9 inch pan.
