Fruit & Nut Spice Cake


1 package Namaste Foods Spice Cake Mix
1-14.5 oz. can pitted red cherries
1 cup coconut
1 cup raisins or craisins
1 cup chopped almonds
1 ½ cups rice chex, crushed
1 cup soft butter
2 eggs
1 tsp. almond extract


  1. Preheat oven to 350° F. Spray 9 x 13 pan with non-stick spray.
  2. Drain cherries and chop into bite size pieces.
  3. In a large bowl beat butter until light and fluffy; add eggs and beat 1 minute. Blend in cake mix and almond extract. Fold in remaining ingredients. Pour mixture into pan. Bake about 40 minutes or until toothpick inserted comes out clean.


  • Finishing touch: Sprinkle top with powdered sugar.
