Fudgy Mint Cookies

Ingredients
3 cups Namaste Foods Brownies Mix
3 Tbsp. oil or shortening
3 Tbsp. water
1 egg
Coating Ingredients
2 (12 ounce) bags semi-sweet chocolate chips
1 tsp. peppermint extract
6 Tbsp. oil or shortening
Directions
- Combine the wafer ingredients (first 4) in large bowl, adding the water a little at a time until the dough forms. Cover and chill for 2 hours.
- Preheat oven to 350° F. Roll out dough to ¼” thick between 2 pieces of waxed paper and cut out with round cookie cutter.
- Arrange wafers on greased or sprayed cookie sheet. Bake for 8-10 minutes. Remove from oven and cool completely.
- Combine chocolate chips with peppermint extract and oil or shortening in a large microwave-safe glass or ceramic bowl.
- Heat on 50 percent power for 2 minutes, stir gently, then heat for an addition minute. Stir again, and if chocolate is not a smooth consistency, continue heating in microwave in 30-second intervals until smooth. Dip each wafer in the chocolate. Place on a wax paper-lined baking sheet. Refrigerate until firm.
Variations
- Recipe works very well using melted coconut oil in place of shortening or oil as well.
