GF + DF Sugar Crinkle Cookies

1-1/2 cups sugar (+ 3 Tbsp for rolling frozen cookie pre-bake)
2 eggs
2 teaspoons vanilla
1 cup vegan butter (she uses Earth Balance)
2-1/4 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1/2 teaspoon salt
1/2 teaspoon baking powder


  1. Cream together sugar and butter.
  2. Add in eggs and vanilla.
  3. In a small bowl, combine Namaste GF Flour, salt and baking powder.
  4. Slowly add dry mixture to butter mixture.
  5. Using a medium ice-cream scoop, scoop cookies onto lined baking sheet. Chill or freeze for 1 hour.
  6. Preheat oven to 375° F when ready to bake.
  7. In a small bowl, add 3 Tbsp sugar. Drizzle cold water atop the dome of the chilled cookie dough. Roll the cookie into sugar. Place the cookie on the baking sheet and bake for 10 min. When 10 minutes has passed, take a heat-safe cup and gently press the top of the cookie down (this will give the cookie the crinkle top). Bake for an additional two minutes. Remove from the oven and let the cookies rest for 15 min. before enjoying!
