Gingerbread Loaf

Ingredients

Spice Mix
1/2 tsp each cinnamon and ginger
1/4 tsp each clove, nutmeg, cardamom, coriander
pinch black pepper (optional)
Loaf

3 large eggs
1 cup sugar (1/2 white, 1/2 brown is a good starting point)
1 tsp vanilla
3/4 cup applesauce
1/3 cup vegetable oil
1 tsp baking soda
1/2 tsp gluten free baking powder
1-1/2 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
3 Tblsp crystalized ginger, chopped (add more if you like)

Directions

  1. Preheat oven to 350°F. Spray metal loaf pan with non-stick spray. Then line the with parchment paper, leaving enough hanging over on the long sides so you can pull the loaf out easily, and spray the paper.
  2. Create your spice mix.
  3. Mix eggs and sugar until well combined. You don’t want lumps.
  4. Add spice mix, vanilla, applesauce, and vegetable oil and blend well so the spices are well distributed.
  5. Add baking soda, baking powder, and Namaste Flour and blend until just incorporated. Don’t overwork a GF batter because you can end up with a gummier end-product.
  6. Stir in your crystallized ginger.
  7. Bake for 50 – 60 minutes, until a toothpick comes out dry. Let cool about 10 minutes and then lift the loaf out to finish cooling on a rack or cutting board, so it doesn’t continue to absorb heat from the pan.

Variations

  • Notes: If you like it spicier, increase the spices but keep the same proportion. If you don’t have some of the spices, you can always make substitutions. For example, allspice would replace the clove and nutmeg, but then I’d cut the cinnamon in half
