Gooey Lemon Bars


For the crust:

1 package Namaste Foods Organic Yellow Cake Mix
1/3 cup oil or unsalted butter, melted
1 egg
1/4 cup lemon juice
1 - 2 teaspoons lemon zest

For the filling:

8 oz cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract
2 eggs


  1. In a large mixing bowl, combine cake mix, butter or oil, lemon juice, zest and egg. Press into the bottom of a 13x9 baking dish.
  2. Combine cream cheese, sugar, vanilla and eggs in a medium bowl with electric mixer. Beat until fluffy. Pour over crust. Bake in a 325°F oven for 40-45 minutes. For best results, under bake a little to get more definition in layers. Remove from oven and cool completely.
  3. Dust with powdered sugar if desired.
  4. Refrigerate for 4 hours (or overnight) for best flavor.
