Graham Cracker Cookies

1 cup Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1/2 cup Trader Joe's Gluten Free Flour
1/2 cup coconut palm sugar
1/3 cup honey
1/2 cup butter (she uses dairy-free)
1 teaspoon baking soda
1/2 teaspoon sea salt
1 tablespoon vanilla
1 egg or flax egg*


  1. *Flax egg - mix 3 Tblsp. of warm water with 1 Tblsp. of flax seed meal. Let it sit about 3 minutes until it forms a gel = 1 egg.
  2. Preheat oven to 350°F.
  3. Mix dry ingredients in a large bowl and set aside.
  4. Mix your butter and honey until it's fully combined. I used one of the beaters from my electric mixer but just by hand - or you could even use a fork. Once fully combined, add in your vanilla and then your egg or flax egg.
  5. Pour your liquid mixture into your dry mixture and mix well.
  6. Place parchment paper on a large cookie sheet. Using a cookie scoop (the smaller size, about a tablespoon) or any spoon and drop cookie dough onto your baking sheet evenly spaced out. The dough will be wet, so don't use your hands as it will just stick to your hands.
  7. You can either let them be round like a dome (if you are using the cookie scoop) or you can press them down with your fingers a little bit.
  8. Bake for 10-11 minutes or until the edges start to brown. Allow the cookies to cool on your cookie sheet for a few minutes before putting them onto a plate.
