Greek Lentil Pasta Salad


1 package Namaste Foods Pasta Pisavera Dinner
½ cup dry lentils
1 green bell pepper, core removed and diced
1 tomato, diced
½ red onion, diced
½ medium cucumber, diced
½ cup sliced black olives
1 cup feta cheese, crumbled
½ cup olive oil (preferably extra virgin)
¼ cup lemon juice
1 package Pasta Pisavera seasoning
3 tbsp. red wine vinegar


  1. Boil lentils in salted water until tender. Drain and cool. Cook the pasta in boiling salted water until done, about 7-10 minutes, stirring occasionally. Set seasoning packet aside. Drain and rinse briefly in cold water to stop the cooking process.
  2. Toss the seasoning packet with pasta, then add the rest of the vegetables, feta cheese, lemon juice and red wine vinegar. Stir in cooled lentils. Season with salt and pepper to taste. Can be served chilled or at room temperature.
