Green Chili Cornbread

Ingredients

1 cup Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend, sifted
¼ cup sugar
1 tbsp. gluten free baking powder
¾ tsp. salt
1 cup yellow corn meal
2 eggs
1 cup milk, any kind
¼ cup shortening or oil
4 oz can diced green chilis
1 cup shredded jack or cheddar cheese (optional)

Directions

  1. Preheat oven to 375° F. Grease or spray 8x8 pan.
  2. Blend together flour, sugar, baking powder, salt and corn meal. Add eggs, milk, chilis, cheese and shortening or oil. Blend well. Do not over beat.
  3. Bake for 20-25 minutes or until top is lightly browned and toothpick inserted in center comes out clean.

Variations

  • Serving Suggestion: Excellent served warm with butter and honey. Also nice to serve with Taco Tuna Skillet.
