Green Chili Cornbread
Ingredients
1 cup Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend, sifted
¼ cup sugar
1 tbsp. gluten free baking powder
¾ tsp. salt
1 cup yellow corn meal
2 eggs
1 cup milk, any kind
¼ cup shortening or oil
4 oz can diced green chilis
1 cup shredded jack or cheddar cheese (optional)
Directions
- Preheat oven to 375° F. Grease or spray 8x8 pan.
- Blend together flour, sugar, baking powder, salt and corn meal. Add eggs, milk, chilis, cheese and shortening or oil. Blend well. Do not over beat.
- Bake for 20-25 minutes or until top is lightly browned and toothpick inserted in center comes out clean.
Variations
- Serving Suggestion: Excellent served warm with butter and honey. Also nice to serve with Taco Tuna Skillet.
