Ice Cream Sandwiches

Ingredients
2-3/4 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1 cup shortening or butter (regular or dairy free)
1-1/2 cups sugar
2 eggs
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt
Cinnamon-sugar mixture
2 Tbsp. sugar
1 tsp. cinnamon
* Ice Cream (regular or dairy free)
Directions
- Mix flour, cream of tartar, baking soda, and salt together. Set aside.
- Cream together sugar and butter. Add eggs and blend well.
- Add dry ingredients to wet ingredients and mix well.
- In a small bowl combine the 2 tbsp. sugar and 1 tsp. cinnamon. Shape dough into 1 inch balls and roll in cinnamon-sugar mixture.
- Place 2 inches apart on an ungreased cookie sheet.
- Bake for 8-10 minutes at 350° F. Allow to cool.
- Sandwich your choice of ice cream between two cookies and enjoy!
