Italian Soft Anise Cookies

Great for the holidays or just to make the day special.
Cookie Ingredients
3 eggs
4 teaspoons gluten free baking powder
2 teaspoons anise extract
3/4 cup sugar
4 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
3/4 cup vegetable oil
1/2 cup milk, any kind
Glaze Ingredients
2 cups powdered sugar
3-4 tablespoons milk, any kind
1 teaspoon anise extract
Directions
- Preheat oven to 350° F. Line baking sheets with parchment paper.
- In a large mixing bowl, beat the eggs, baking powder, sugar and anise extract.
- Add the vegetable oil and milk. Once combined, add flour in 1 cup increments, mixing well between each addition. Dough will be thick and sticky. Refrigerate for 20 minutes to help with stickiness.
- Roll into tablespoon size chunks of dough between your palms until smooth. Place 2 inches apart on cookie sheet.
- Bake for 10-12 minutes, until bottom of cookie is pale golden brown. Transfer to a wire rack to cool.
- Combine and stir ingredients for glaze until smooth. Dip the tops of cookies once cool, and place on wire rack, allowing the glaze to drip down cookie.
- Top with sprinkles if desired before glaze sets.
