Italian Soft Anise Cookies

Great for the holidays or just to make the day special.

Cookie Ingredients
3 eggs
4 teaspoons gluten free baking powder
2 teaspoons anise extract
3/4 cup sugar
4 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
3/4 cup vegetable oil
1/2 cup milk, any kind

Glaze Ingredients
2 cups powdered sugar
3-4 tablespoons milk, any kind
1 teaspoon anise extract

Directions

  1. Preheat oven to 350° F. Line baking sheets with parchment paper.
  2. In a large mixing bowl, beat the eggs, baking powder, sugar and anise extract.
  3. Add the vegetable oil and milk. Once combined, add flour in 1 cup increments, mixing well between each addition. Dough will be thick and sticky. Refrigerate for 20 minutes to help with stickiness.
  4. Roll into tablespoon size chunks of dough between your palms until smooth. Place 2 inches apart on cookie sheet.
  5. Bake for 10-12 minutes, until bottom of cookie is pale golden brown. Transfer to a wire rack to cool.
  6. Combine and stir ingredients for glaze until smooth. Dip the tops of cookies once cool, and place on wire rack, allowing the glaze to drip down cookie.
  7. Top with sprinkles if desired before glaze sets.
