Johnny Cakes with Blueberries

Ingredients

1½ cups Namaste Foods Waffle & Pancake Mix
1 egg
¾ cup water
¾ cup oil
1 Tbsp. sugar
1 Tbsp. cornmeal
½ cup blueberries, fresh or frozen (thawed)

Directions

  1. Combine all ingredients and mix well. Pour onto preheated, sprayed pan or griddle on medium heat. Flip when edges bubble and solidify. Makes about 9 - 4 inch Johnny Cakes. As with all pancakes, may need to add more liquid to batter as it sits and absorbs moisture.
  2. Top with butter, blueberries, and a dollop of whipped cream if desired.

  • Recipe variation: Fresh raspberries or strawberries would be great, too!
