Johnny Cakes with Blueberries
Ingredients
1½ cups Namaste Foods Waffle & Pancake Mix
1 egg
¾ cup water
¾ cup oil
1 Tbsp. sugar
1 Tbsp. cornmeal
½ cup blueberries, fresh or frozen (thawed)
Directions
- Combine all ingredients and mix well. Pour onto preheated, sprayed pan or griddle on medium heat. Flip when edges bubble and solidify. Makes about 9 - 4 inch Johnny Cakes. As with all pancakes, may need to add more liquid to batter as it sits and absorbs moisture.
- Top with butter, blueberries, and a dollop of whipped cream if desired.
Variations

- Recipe variation: Fresh raspberries or strawberries would be great, too!
