Lemon Blueberry Muffins
Ingredients
1 Namaste Foods Quick Bread & Muffin Mix
2 eggs
1/3 cup melted butter or oil
3/4 cup milk, any kind
3/4 cup fresh blueberries
1 Tbsp. lemon zest
Glaze (optional)
2 Tbsp. butter, softened
2 Tbsp. lemon juice
1/2 cup powdered sugar
1/2 tsp. vanilla
Directions
- Heat oven to 350° F. Lightly grease muffin pan or insert paper liners.
- Set aside 1 Tbsp. dry mix. Combine eggs, melted butter or oil, milk and mix. Gently toss blueberries in reserved dry mix. Fold blueberries and lemon zest into batter.
- Fill cups about 3/4 full with batter. Bake for 15-19 minutes or until toothpick inserted in center comes out clean. Cool completely on wire rack.
- Combine glaze ingredients until smooth. Drizzle over cooled muffins and allow to sit for 15 minutes.
Variations: May also top with lemon zest and turbinado sugar.
