Lemon Blueberry Muffins


1 Namaste Foods Quick Bread & Muffin Mix
2 eggs
1/3 cup melted butter or oil
3/4 cup milk, any kind
3/4 cup fresh blueberries
1 Tbsp. lemon zest
Glaze (optional)

2 Tbsp. butter, softened
2 Tbsp. lemon juice
1/2 cup powdered sugar
1/2 tsp. vanilla


  1. Heat oven to 350° F. Lightly grease muffin pan or insert paper liners.
  2. Set aside 1 Tbsp. dry mix. Combine eggs, melted butter or oil, milk and mix. Gently toss blueberries in reserved dry mix. Fold blueberries and lemon zest into batter.
  3. Fill cups about 3/4 full with batter. Bake for 15-19 minutes or until toothpick inserted in center comes out clean. Cool completely on wire rack.
  4. Combine glaze ingredients until smooth. Drizzle over cooled muffins and allow to sit for 15 minutes.

Variations: May also top with lemon zest and turbinado sugar.
