Lemon Lavender Bars


For the lavender sugar
3-1/4 cups sugar
2 Tbsp. CULINARY dried lavender

For the crust
1/2 cup unsalted butter, melted
1/2 cup lavender sugar
2 tsp. vanilla extract
1/2 tsp. salt
2 cups Namaste Foods Perfect Flour Blend or Organic Perfect Flour Blend

For the filling

8 large eggs
1-1/4 cups fresh lemon juice (about 4 large lemons)
zest from 2 lemons
2-3/4 cups lavender sugar
1/2 cup Namaste Foods Perfect Flour Blend or Organic Perfect Flour Blend

powdered sugar for serving (optional)


For the lavender sugar

  1. Place the lavender in a food processor and blend 10-15 seconds. Add 1 cup of sugar and blend for additional 15-20 seconds, until lavender is finely ground and combined with sugar.
  2. Add remaining sugar and pulse food processor until well combined.

For the crust

  1. Preheat oven to 350° F. Line a 9x13 pan with foil and spray with non-stick cooking spray.
  2. In a large bowl, whisk together butter, 1/2 cup lavender sugar, vanilla and salt. Add 2 cups Perfect Flour Blend and stir with spatula. Press the dough into greased pan in an even layer.
  3. Bake 25-30 minutes until golden brown.

For the filling

  1. In a large bowl, whisk eggs, lemon juice, 2-3/4 cups lavender sugar and lemon zest. Sift 1/2 cup of Perfect Flour Blend into bowl and whisk again.
  2. When the crust is done, pour the filling over hot crust and place back in oven. Reduce temperature to 325° F and bake 25-30 minutes. It is done when center barely moves when pan is tapped.
  3. When done baking, remove from oven and cool to room temperature before cutting.
  4. Sprinkle with powdered sugar, if desired. Store in refrigerator.
