Maple Brown Butter Glazed Apple Cinnamon Scones
Makes 8 scones.
Ingredients
1 pkg. Namaste Foods Muffin and Scone Mix
1 teaspoon cinnamon
8 tablespoons cold, unsalted butter
2 eggs, beaten
1/3 cup milk, plus more for brushing
1 tablespoon vanilla extract
1 large or 2 small honeycrisp apples, chopped (unpeeled)
Cinnamon sugar for sprinkling (optional) 1/4 cup sugar mixed with 1 tablespoon cinnamon
Maple brown butter glaze
2 tablespoons butter
1/4 cup maple syrup
1/3 cup powdered sugar
1 teaspoon vanilla extract
pinch of salt
Directions
- Heat oven to 400° F. Lightly grease cookie sheet or line with parchment paper.
- In large bowl combine Muffin mix and cinnamon. Cut 8 tablespoons cold butter into mix using pastry blender or forks until somewhat crumbly.
- Add vanilla, milk and eggs and mix until just combined. Do not overmix. Fold in chopped apples.
- Turn the dough onto a floured surface and then pat into a 1-inch-thick circle. Cut the dough into 8 wedges. Place pieces about 2" apart and brush lightly with milk.
- Bake until golden brown, 16-20 minutes.
Maple brown butter glaze
- Begin glaze while scones are baking. Add butter to small saucepan.
- Allow the butter to brown lightly until it smells toasted, about 2-3 minutes, stirring often. Remove from the heat and whisk in the maple syrup, powdered sugar, vanilla and salt.
- Allow scones to cool slightly. Drizzle with glaze and sprinkle with cinnamon sugar, if using.
- Best served warm!
