Mini Blackberry Pies

For the crust:


  1. Crust directions: Mix coconut oil, flour, salt and ¼ cup sugar with hands until just incorporated. Add 2-4 tablespoons water just until dough comes together.
  2. Flatten with hands and press into muffin tins. Set aside a small amount of crust to put on tops.
  3. Berry filling: In medium bowl mix together berries, sugars, salt, tapioca starch, vanilla and cinnamon, then let them sit for 10 minutes.
  4. Add mixture to the pie crust. Add a little crust on top.
  5. Bake at 400°F for 20-25 minutes. Cool completely. Perfect served with whipped cream.
