Mini Blackberry Pies

Ingredients
For the crust:
- 1/3 cup coconut oil
- 1 cup Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
- 1/2 tsp salt
- 1/4 cup white sugar
- For the berry filling:
- 1/2 cup coconut sugar
- 1/4 cup white sugar
- 1/8 tsp salt
- 4 tablespoons tapioca starch
- 1 tablespoon vanilla
- 1 tsp cinnamon
- 2 cups fresh blackberries
Directions
- Crust directions: Mix coconut oil, flour, salt and ¼ cup sugar with hands until just incorporated. Add 2-4 tablespoons water just until dough comes together.
- Flatten with hands and press into muffin tins. Set aside a small amount of crust to put on tops.
- Berry filling: In medium bowl mix together berries, sugars, salt, tapioca starch, vanilla and cinnamon, then let them sit for 10 minutes.
- Add mixture to the pie crust. Add a little crust on top.
- Bake at 400°F for 20-25 minutes. Cool completely. Perfect served with whipped cream.
