Oatmeal Apple Muffins

Makes about 12 muffins.

Ingredients

1 cup Namaste Foods Muffin and Scone Mix
1/2 cup milk, any kind
3/4 cup quick cooking gluten free oatmeal
1/4 cup oil (we used melted coconut oil)
2 eggs or equivalent
1/2 cup brown sugar
1 tsp. gluten free baking powder
1/2 tsp. cinnamon
1/4 tsp. nutmeg
3/4 cup diced apple (okay to leave skin on)
1/4 cup dried cranberries (optional)

Directions

  1. Combine milk and oatmeal in small bowl. Allow to soak for at least 15 minutes or more.
  2. Preheat oven to 400°F. Grease muffin cups or insert paper liners.
  3. In large bowl, combine Muffin mix, baking powder, cinnamon and nutmeg. Combine eggs, oil, and brown sugar in separate small bowl. Add wet ingredients to muffin mixture.
  4. Add oatmeal, apples and cranberries (if using), mix. Fill muffin cups 3/4 full. Bake for about 20 minutes until tops are golden brown and an inserted toothpick comes out clean.

Variations

  • Experiment with adding your own favorite additions such as fresh berries, nuts, dried fruit and chocolate chips.
  • You can easily double this recipe and use the entire package of muffin mix.
