Oatmeal Apple Muffins

Makes about 12 muffins.
Ingredients
1 cup Namaste Foods Muffin and Scone Mix
1/2 cup milk, any kind
3/4 cup quick cooking gluten free oatmeal
1/4 cup oil (we used melted coconut oil)
2 eggs or equivalent
1/2 cup brown sugar
1 tsp. gluten free baking powder
1/2 tsp. cinnamon
1/4 tsp. nutmeg
3/4 cup diced apple (okay to leave skin on)
1/4 cup dried cranberries (optional)
Directions
- Combine milk and oatmeal in small bowl. Allow to soak for at least 15 minutes or more.
- Preheat oven to 400°F. Grease muffin cups or insert paper liners.
- In large bowl, combine Muffin mix, baking powder, cinnamon and nutmeg. Combine eggs, oil, and brown sugar in separate small bowl. Add wet ingredients to muffin mixture.
- Add oatmeal, apples and cranberries (if using), mix. Fill muffin cups 3/4 full. Bake for about 20 minutes until tops are golden brown and an inserted toothpick comes out clean.
Variations
- Experiment with adding your own favorite additions such as fresh berries, nuts, dried fruit and chocolate chips.
- You can easily double this recipe and use the entire package of muffin mix.
