Orange Glazed Cranberry Bread


For the streusel
1/4 cup Namaste Organic Quick Bread & Muffin Mix
2 tablespoons sugar
1/2 teaspoon cinnamon
3 tablespoons unsalted butter, cold and cubed

For the bread
Rest of Namaste Organic Quick Bread & Muffin Mix (set aside 2 Tbsp. to dust cranberries)
1 teaspoon baking powder
2 eggs
3/4 cup buttermilk
1/3 cup oil or melted butter
2 teaspoons orange zest
1 teaspoon vanilla
1 cup fresh or frozen cranberries (do not thaw)

For the glaze (optional)
1 cup powdered sugar
1 to 2 tablespoons orange juice


For the streusel:

  1. Whisk the sugar, 1/4 cup of mix and cinnamon together in a medium bowl. Cut in the butter until mixture resembles pea-sized crumbs.
  2. Put in refrigerator until ready to use.

For the bread

  1. Preheat oven to 350° F. Spray a 9x5 loaf pan with non-stick spray.
  2. In a small bowl, dust cranberries with 2 Tbsp. of dry mix. Set aside.
  3. In a large bowl, whisk together remaining mix and baking powder.
  4. In medium bowl, combine buttermilk, butter, vanilla and orange zest with electric mixer. Add eggs and mix well.
  5. Add wet ingredients to dry mixture and mix until just combined. Fold in cranberries.
  6. Pour batter into prepared pan. Sprinkle streusel evenly over top and press down gently so it sticks.
  7. Bake for 50-65 minutes or until toothpick inserted in center comes out clean.
  8. Cool bread completely in the pan on a wire rack.

For the glaze

  1. In a small bowl, whisk together orange juice and powdered sugar. Add more orange juice if too thick.
  2. Pour over cooled loaf.
