Orange Glazed Cranberry Bread
Ingredients:
For the streusel
1/4 cup Namaste Organic Quick Bread & Muffin Mix
2 tablespoons sugar
1/2 teaspoon cinnamon
3 tablespoons unsalted butter, cold and cubed
For the bread
Rest of Namaste Organic Quick Bread & Muffin Mix (set aside 2 Tbsp. to dust cranberries)
1 teaspoon baking powder
2 eggs
3/4 cup buttermilk
1/3 cup oil or melted butter
2 teaspoons orange zest
1 teaspoon vanilla
1 cup fresh or frozen cranberries (do not thaw)
For the glaze (optional)
1 cup powdered sugar
1 to 2 tablespoons orange juice
Directions:
For the streusel:
- Whisk the sugar, 1/4 cup of mix and cinnamon together in a medium bowl. Cut in the butter until mixture resembles pea-sized crumbs.
- Put in refrigerator until ready to use.
For the bread
- Preheat oven to 350° F. Spray a 9x5 loaf pan with non-stick spray.
- In a small bowl, dust cranberries with 2 Tbsp. of dry mix. Set aside.
- In a large bowl, whisk together remaining mix and baking powder.
- In medium bowl, combine buttermilk, butter, vanilla and orange zest with electric mixer. Add eggs and mix well.
- Add wet ingredients to dry mixture and mix until just combined. Fold in cranberries.
- Pour batter into prepared pan. Sprinkle streusel evenly over top and press down gently so it sticks.
- Bake for 50-65 minutes or until toothpick inserted in center comes out clean.
- Cool bread completely in the pan on a wire rack.
For the glaze
- In a small bowl, whisk together orange juice and powdered sugar. Add more orange juice if too thick.
- Pour over cooled loaf.
