Orange Walnut Cake


3 ½ cups Namaste Foods Perfect Flour Blend
2 tsp gluten free baking powder
2 tsp baking soda
¼ tsp salt
¾ cup shortening
¼ cup butter or butter substitute, softened
2 large eggs
1 tsp vanilla extract
1 ½ cups brown sugar
1 cup buttermilk
¼ cup orange juice
2 tbsp finely grated orange zest (about 1 large orange)
1 cup finely chopped walnuts


  1. Preheat oven to 350° F.
  2. In a large mixing bowl blend butter, shortening, brown sugar, eggs, vanilla until smooth. Add orange juice, milk and orange zest, combine. Slowly add dry ingredients mixing well between additions. When all dry ingredients are incorporated, fold in chopped nuts.
  3. Grease 9x13 baking dish. Pour batter into pan and spread evenly. Bake for 28-30 minutes or until toothpick inserted in center comes out clean.
