Peach Cobbler

Ingredients
1 package Namaste Foods Muffin and Scone Mix (divide dry mix in two equal portions, reserve half for another day)
4 cups peaches, peeled and sliced
½ cup brown sugar
4 tsp. arrowroot powder, cornstarch or other thickener
½ cup water
1 tbsp. lemon juice
1 egg
2 tbsp. oil
½ cup water
½ tsp. cinnamon
¼ tsp. ground ginger
¼ tsp. nutmeg
Directions
- Preheat oven to 400° F.
- In a medium pan, combine brown sugar, arrowroot, nutmeg and water. Cook over a low heat, stirring until bubbly and it starts to thicken. Add peaches and lemon juice. Cook only until it has heated through. Place in a 1½ quart casserole.
- Combine ½ bag dry muffin mix, egg, oil, water, cinnamon and ground ginger and mix well. Spoon the muffin batter over the fruit and spread around evenly. Bake cobbler for 20-25 minutes until topping is brown and fruit is bubbling. Serve warm with ice cream or whipped cream if desired.
Variations
- Try adding small pieces of crystallized ginger to this for a spicy twist!
- Also, feel free to substitute pears or apples for the peaches.
