Pineapple Banana Muffins

Yummy low fat recipe with no oil or sugar added! Makes about 12 muffins.

Ingredients

1 pkg. Namaste Foods Muffin and Scone Mix
1-8 oz can crushed pineapple, undrained
1 tsp. cinnamon
About 1 cup mashed ripe bananas (3 small)
3 eggs

Directions

  1. Heat oven to 400° F. Lightly spray or grease muffin tins or use paper liners.
  2. In large bowl combine Muffin mix and cinnamon. Set aside.
  3. In small bowl combine eggs, pineapple and bananas. Add wet ingredients to dry and combine until just mixed.
  4. Fill cups 3/4 full. Bake for 12-15 minutes until tops turn a light golden brown.
