Pumpkin Cake

Ingredients

1 cup Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1 cup sugar
1/2 cup + 2 Tbsp. oil
1/2 tsp. vanilla extract
1 cup canned pumpkin
2 eggs
1-1/2 tsp. gluten free baking powder
1 tsp. baking soda
1/8 tsp. salt
1 tsp. ground cinnamon

Directions

  1. Preheat oven to 350 degrees F. Grease 8 X 8 inch baking pan. Sift together the flour, baking powder, baking soda, salt and cinnamon. Set aside. In a large bowl combine sugar and oil. With a wire whisk blend in vanilla and pumpkin, then beat in eggs one at a time. Gradually beat in flour mixture. Spread batter into prepared 8 X 8 inch pan. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
