Pumpkin Cookies

Ingredients

1/2 cup unsalted butter, softened
1 cup sugar
2 eggs
1 cup canned pumpkin (not pumkin pie filling)
2 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
4 teaspoons baking powder
1 teaspoon salt
2-1/2 tsp. cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground ginger

Cream Cheese Frosting (optional)
1/2 cup (1 stick) unsalted butter, softened
8 oz cream cheese (brick style), softened
1 tsp. vanilla
1/4 sp. salt
4 cups powdered sugar

Directions

  1. Preheat oven to 350°F. Line cookie sheet with parchment paper.
  2. In a large bowl combine sugar and butter. Add eggs and pumpkin; mix well. Gradually beat in remaining dry ingredients. Place on cookie sheet in rounded tablespoons Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center of the cookie comes out clean. Allow to cool completely if frosting.

Cream Cheese Frosting

  1. Combine softened butter and cream cheese with electric mixer until smooth.
  2. In a large bowl combine cream cheese mixture with remaining ingredients until there are no lumps. Use to frost completely cooled cupcakes. Sprinkle frosted cookies with cinnamon (optional).
