Pumpkin Cookies
Ingredients
1/2 cup unsalted butter, softened
1 cup sugar
2 eggs
1 cup canned pumpkin (not pumkin pie filling)
2 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
4 teaspoons baking powder
1 teaspoon salt
2-1/2 tsp. cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground ginger
Cream Cheese Frosting (optional)
1/2 cup (1 stick) unsalted butter, softened
8 oz cream cheese (brick style), softened
1 tsp. vanilla
1/4 sp. salt
4 cups powdered sugar
Directions
- Preheat oven to 350°F. Line cookie sheet with parchment paper.
- In a large bowl combine sugar and butter. Add eggs and pumpkin; mix well. Gradually beat in remaining dry ingredients. Place on cookie sheet in rounded tablespoons Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center of the cookie comes out clean. Allow to cool completely if frosting.
Cream Cheese Frosting
- Combine softened butter and cream cheese with electric mixer until smooth.
- In a large bowl combine cream cheese mixture with remaining ingredients until there are no lumps. Use to frost completely cooled cupcakes. Sprinkle frosted cookies with cinnamon (optional).
