Pumpkin Scones

Makes 8 scones
Ingredients
1 pkg Namaste Foods Muffin and Scone Mix
1/2 cup cold butter
3 teaspoons pumpkin pie spice
2 eggs or equivalent
1/2 cup pumpkin puree
1/3 cup milk, any kind
Frosted Glaze (ingredients below) optional
1 cup powdered sugar
2 tablespoons milk, any kind
Spiced Glaze (optional, combine with Frosted Glaze ingredients above after mixing together separately)
1/2 cup powdered sugar
1/2 teaspoon pumpkin pie spice
1 tablespoon milk, any kind
Directions
- Preheat oven to 400°F. Lightly grease cookie sheet or line with parchment paper.
- Combine Muffin Mix with 3 teaspoons pumpkin pie spice in a large bowl. Cut in butter with pastry cutter or forks until it resembles coarse crumbs.
- Whisk together eggs, 1/3 cup milk and pumpkin puree in separate small bowl. Stir wet ingredients into dry until just combined.
- Shape into 8 disks or triangles, wetting fingers if needed. Space apart on baking sheet.
- Bake 12-15 minutes until golden brown and toothpick inserted in center comes out clean. Let cool for 20 minutes before glazing.
- Mix frosted glaze and spiced glazes into separate containers. Once scones have cooled some, spoon frosted glaze onto scones, then drizzle with spiced glaze. Allow glazes to set before serving.
