Pumpkin Spice Waffles
Makes about 4-5 average size waffles.
Ingredients
2-1/3 cups Namaste Foods Waffle & Pancake Mix
2 eggs
1 tablespoon sugar
½ teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon ground ginger
3/4 cup canned pumpkin
Directions
- Heat waffle iron; grease with vegetable oil if necessary (or spray with non-stick spray).
- Combine all ingredients and mix well. Pour batter into preheated, sprayed waffle iron to cover bottom.
- To store, tightly wrap cooked waffles and freeze; reheat by toasting in your toaster.
Variations
- Top with any or all of the following: peeled sauteed pears or apples, honey or maple syrup, whipped cream sprinkled with cinnamon
