Quick Fresh Fruit Upside-Down Cake

1 package Namaste Foods Organic Yellow Cake Mix
2 Tbsp. butter
2 Tbsp. Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
2 cups mixed fresh fruit
1/4 cup apricot preserves or red currant jelly, melted and divided


  1. Preheat oven to 350° F.
  2. Spread butter evenly over the bottom of a round 8-inch cake pan; dust with flour.
  3. Prepare the Namaste Organic Yellow Cake Mix according to package directions.
  4. Arrange the fruit decoratively in the bottom of prepared pan. Drizzle with 2 Tbsp. melted preserves. Spoon the cake batter evenly over the fruit. Tap the pan on the counter to evenly distribute the batter.
  5. Bake until the center of the cake springs back when gently pressed, about 35 minutes. Cool the cake in the pan on a rack for 10 minutes. Loosen the edges and invert onto a serving plate.
  6. Heat the remaining preserves; drizzle over the cake. Serve with whipped cream or ice cream, if desired.
