Savory Feta & Chive Muffins


1 package Namaste Organic Quick Bread & Muffin Mix
1 teaspoon baking powder
2 eggs, room temperature
1 cup milk, any kind
2 tablespoons butter, melted
1/2 cup crumbled feta cheese
3 tablespoons fresh minced chives or 1-1/2 tablespoons dried chives or dill


  1. Preheat oven to 400°F. Grease or line 12 muffin cups with paper liners.
  2. In a large bowl, whisk together the mix and baking powder.
  3. In a separate bowl combine eggs, milk and butter. Stir into wet ingredients until just combined.
  4. Fold in chives or dried dill and feta cheese.
  5. Fill muffin cups 3/4 full.
  6. Bake for 19-23 minutes. Serve warm.
