Makes 6 shortcakes

Ingredients

1-3/4 cups Organic All Purpose Baking Mix
3 tablespoons sugar
1/3 cup cold butter
2 eggs, beaten
1/4 cup milk, any kind
1/4 teaspoon vanilla (optional)

Directions

1. Combine mix and sugar. Cut butter into mix with pastry cutter or forks.
2. Add remaining ingredients and combine until just blended.
3. Divide into 6 servings and place onto ungreased baking sheet.
4. Bake in 425° F oven for about 12-14 minutes.
