Strawberry Streusel Muffins

Works well with fresh or frozen strawberries! Makes about 18 muffins.


1 pkg. Namaste Foods Muffin and Scone Mix
2 eggs
1/4 cup melted butter or oil
1 teaspoon vanilla extract
3/4 cup water (if using frozen berries, use juice in place of all or part of water)
3/4 cup to 1 cup fresh or frozen strawberries, chopped

Streusel Topping (optional)
1/4 cup butter, melted
1/2 cup brown sugar
1 teaspoon cinnamon
1/3 cup Namaste Perfect Flour Blend


  1. Heat oven to 400° F. Lightly spray or grease muffin tins or use paper liners.
  2. In large bowl combine eggs, butter, water and vanilla. Add Muffin mix and combine until just mixed.
  3. Fill cups 3/4 full. Sprinkle streusel topping if using (see below) evenly over tops. Bake for 12-15 minutes until tops turn a light golden brown or until toothpick inserted in center comes out clean.

Streusel Topping
In small bowl combine all topping ingredients with fork until nice crumb forms. Sprinkle evenly on muffin tops before baking.
