Streusel Coffee Cake

Ingredients

Cake
1-½ cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
2-½ teaspoons gluten free baking powder
½ teaspoon salt
1 egg, beaten
3/4 cup sugar
1/3 cup melted butter
½ cup milk, any kind
½ teaspoon vanilla

Streusel Topping
½ cup brown sugar
¼ cup sifted Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend (sift before measuring)
¼ cup butter, room temperature
½ teaspoon cinnamon

Directions

  1. Heat oven to 375° F. Grease and flour a 8" square or 9" round pan.
  2. Topping: Combine topping ingredients above in a small bowl with fork until crumbly. Set aside.
  3. Cake: Combine 1-1/2 cups flour, baking powder, salt and vanilla in small bowl. In a separate medium bowl, beat together beaten egg, 3/4 cup sugar and 1/3 cup melted butter. Add milk. Stir in flour mixture and mix well.
  4. Pour batter into the pan. Sprinkle topping mixture evenly over batter. Bake for 25-30 minutes or until toothpick inserted in center comes out clean. Partially cool in pan on wire rack. Cut coffee cake into squares while still warm.
