Tamale Pie

Ingredients

1 package Namaste Foods No Sugar Added Muffin Mix
1½ pounds lean ground beef or ground turkey
1 taco seasoning packet to taste

2 eggs
½ cup oil
1 cup water
½ onion, diced
1 green pepper, diced
1 small can chopped green chiles
1-(14 oz.) can diced tomatoes, drained of juice
1-(8 oz.) can tomato sauce
1 small can sliced black olives
1-(15 oz.) can kidney beans
¼ cup cornmeal
2 tsp. garlic powder
1 cup cheddar cheese, grated (optional)
2 green onions, chopped

Directions

  1. Preheat oven to 375° F.
  2. Brown ground beef with taco seasoning in skillet until cooked completely, about 8-12 minutes. Drain fat and set aside. Sauté onion and pepper in same skillet until soft, about 6-8 minutes. Add beef back into pan along with the chiles, tomatoes, tomato sauce, black olives and kidney beans. Simmer for 10 minutes until liquid thickens a little bit.
  3. Spoon ground beef into bottom of 9x13 pan sprayed with non-stick vegetable spray. Combine Muffin mix, eggs, oil, water, cornmeal and garlic powder. Pour over meat mixture and spread to cover completely. Bake for 30-40 minutes until batter is baked through and meat layer is bubbling. Remove from oven and sprinkle on cheese if desired. Return to oven for 5 minutes to melt cheese. Serve hot.

Variations

  • Serving suggestion: This tamale pie tastes great served with a tropical fruit salad.
  • Healthy Hint: Rinsing and draining the canned beans reduces the sodium level of the beans.
